Raw Mango – 1 finely chopped

Methi Seeds -2 tbsp

Mustard Seeds – 2 tbsp

Red Chilli Powder – 3 tbsp

Asafoetida  – 2 tbsp

Oil – 10 tbsp

Salt – to taste


First finely chop the raw mango.

Add salt and asafoetida to the raw mango and mix well.  Allow it to rest for 2-3 hours.

In a kadai, dry roast Methi seeds and once cool blend it into a fine powder.  Add this powder to the raw mango and mix well.

In the same kadai add some oil and once hot add the mustard seeds allowing it to splutter.  Switch off the stove and add the red chilly powder and mix well in the kadai.  Pour this mixture on the raw mango and keep it aside for a few hours.

Yummy Kalyana Mangaai is ready for use !!  Keep it in the refrigerator and it can be used upto 10 days.
