This is a very rare recipe which I learnt from my grandmother. You will not get this in any restaurant. This goes very well with Dosas. 

Ingredients :

Brinjals – 10-12 small or 2 large

Green chillies – 4-5 finely chopped

Mustard seeds – 1 tsp

Urad dal – 1 tsp

Turmeric powder – 1 tsp

Asafoetida – 1 tsp

Curry leaves – 1 sprig

Oil – 6 tbsp

Salt to taste

Rice flour – 1 tbsp

Method:

Finely chop the Brinjals and keep them aside in water.

In a kadai heat oil and add Mustard seeds, Urad dal, green chillies, asafoetida and curry leaves and saute till the mustard seeds splutter.

Now add the Brinjals after draining the water. Add turmeric powder and salt  and mix it well. Now add 3-4 cups of water and bring it to a boil till the brinjals become soft.

Add the rice flour in 1/4 cup of water, mix it well and add the mix to the kadai. Once the gravy has thickened turn off the heat.

Yummy nezhukari is ready for tasting. Enjoy with Dosas!!!
