Ingredients:

Capsicum – 1  large finely chopped

Potatoes – 4 medium

Tomatoes – 4

American corn – 1 cup

Grated paneer – 2 cups

Green chillies – 4-5 finely chopped

Ginger – 1 small piece finely chopped

Fennel seeds – 1 tsp

Cumin seeds – 1 tsp

Poppy seeds – 1  tsp

Turmeric – 1 tsp

Red chilli powder – 1 tsp

Coriander powder – 1 tsp

Subji masala – 1 tbsp

Ghee /oil – 4-5 tbsp

Coriander leaves – 1  bunch finely chopped

Salt to taste

Method:

Boil the potatoes – once cooked, peel the skin, mash it and keep it aside.

In a kadai, heat ghee/oil and once hot add Fennel seeds, cumin seeds, Poppy seeds, green chillies, ginger and saute for couple of minutes.

Now add tomatoes and saute till it becomes mushy.

Now add capsicum,  American corn, Turmeric powder, red chilli powder, coriander powder and subji masala  and saute for a few minutes.

Now add Grated paneer, mashed potatoes and salt and mix well. Let it cook for 3-4 minutes.

Garnish with coriander leaves.

Capsicum, paneer and aloo dry subji is now ready!
