Ingredients:

Parangikkai (Butternut Squash ) -1 medium size cut into cubes

Green chillies – 4-5 slit

Curry Leaves -1 sprig

Mustard seeds – 1 tbsp

Turmeric powder – 1 tbsp

Coconut milk – 2 cups

Oil – 4-5 tbsp

Salt to taste

Method:

In a kadai heat oil and once hot add Mustard seeds, green chillies and curry leaves and saute for a couple of minutes.

Now add the Parangikkai, Turmeric powder and saute for a couple of minutes.

Add three cups of water and salt and let water come to a boil .

Now add coconut milk and mix well. Cook for a few more minutes till everything has blended together nicely.

Yummy Parangikkai Kootu is ready ! !
