Aubergines -2 medium size
Onions – 2-3 roughly chopped
Tomatoes – 4 – 5 (half finely chopped)
Ginger and garlic paste -1 tbsp
Green chillies -4-5
Cumin seeds -1 tbsp
Red chilli powder -1 tsp
Turmeric powder -1 tsp
Ghee /oil – 4-5 tbsp
Curry Leaves -1 sprig
Coriander leaves -1 bunch finely chopped
Salt to taste
Apply oil on the aubergines and roast them directly on the gas stove. Alternatively, pre heat the oven to 180’C and roast it for 10-12 minutes .
Let the aubergines to cool and once cool blend them into a fine paste and keep it aside .
In a kadai heat oil and once hot add Cumin seeds , green chillies, ginger and garlic paste and onions and saute for a few minutes . Now add the roughly chopped tomatoes and saute till the tomatoes become soft. Allow this to cool and blend it into a fine paste .
In the same kadai, saute the remaining tomatoes after adding curry leaves Turmeric and red chilli powder till it becomes mushy.
Now add both the aubergines paste and the onion tomatoes paste that we had kept aside earlier . Add salt and mix them well . Let it cook for a few more minutes till it starts bubbling like halwa.
Garnish with coriander leaves .
