Ingredients:

Beetroot – 3 medium

Carrots – 2

Potatoes – 4 medium

Green Peas – 1 cup

Onions – 2 finely chopped

Red Chilli Powder – 1 tbsp

Mustard Seeds – 1 tsp

Chana dal – 1 tbsp

Urad Dal – 1 tsp

Gram Flour – 1 cup

Rice Flour – 1 1/2 cups

Coriander Leaves – 1 bunch finely chopped

Salt to taste

Oil for frying

Method:

In a  cooker boil beetroot, carrots, potatoes and green peas for 2 whistles.  Once cool mash them coarsely and keep aside.

In a kadai heat oil and add mustatd seeds, urad dal, chana dal and onions and saute for a few minutes.  Add this to the mashed vegetables, add red chilli powder, salt and coriander leaves and mix well.

Now add the gram flour and rice flour to the mixture and mix it well so that there is no moisture.

Now grease your palm and make cutlets and keep ready for frying.

In a kadai heat oil and once hot reduce the flame to medium and fry the cutlets till they become golden brown.
