Brinjals – 1 large chopped into cubes or 6-8 chopped into quarters

Tomatoes -4-5 chopped fine

Mustard seeds -1 tbsp

Cumin seeds – 1 tbsp

Ginger and Garlic paste – 1 tbsp

Green chillies – 2

Red chilli powder – 2 tbsp

Asafoetida – 1 tsp

Ghee / oil – 4-5 tbsp

Curry Leaves -1 sprig

Coriander leaves – 1 bunch finely chopped

Salt to taste


In a kadai heat oil and once hot add Mustard seeds, Asafoetida,  Cumin seeds,  green chillies , curry leaves, and ginger and garlic paste and saute for a few minutes.

Now add the tomatoes, red chilli powder and saute till the tomatoes become mushy.

Now add the Brinjals and salt and mix well.

Now close the lid and let it cook for ten minutes.

Garnish with coriander leaves.
