Ingredients:

Basmati Rice – 4 cups (soaked in water for 20 minutes )

Carrots – 3 finely chopped

Beans – 8-10 finely chopped

Onions – 2 finely chopped

Paneer – 400 gms cut into cubes

Bay leaf – 1

Cloves – 5-6

Cumin seeds – 1 tbsp

Red chilli powder – 2 tsp

Garam masala powder – 1 tbsp

Green chillies – 3-4

Mint leaves – 1 bunch finely chopped

Coriander leaves – 1 bunch finely chopped

Tomatoes – 3-4 finely chopped

Curd – 1 cup

Saffron – 5-6 strands soaked in warm water (optional)

Lemon – 2

Ginger and Garlic paste – 1 tbsp

Ghee / Oil -4-5 tbsp

Salt to taste

Method:

In a cooker add oil and once hot add bay leaves, Cumin seeds, cloves, onions, green chillies, ginger and garlic paste  and saute for a few minutes.

Now add all the vegetables , paneer , coriander and mint leaves and saute for a few more minutes .

Now add curd, lemon juice, red chilli powder and garam masala powder and mix well .

Now add 4 cups of water, Saffron water and salt and let it come to a boil .

Now add the soaked rice and close the lid. Let it cook for 8 minutes on a low flame.

Garnish with Ghee and coriander leaves.
