Potatoes – 2 large cut into cubes

Aubergine – 1 large cut into cubes

Tomatoes – 4 (3 roughly chopped and 1 finely chopped)

Onions – 2 medium roughly chopped

Green Chillies – 2

Turmeric Powder – 1 tsp

Red chilli powder – 2 tsp

Coriander Powder – 2 tsp

Ginger Garlic Paste – 1 tbsp

Cumin Seeds – 1 tbsp

Fennel Seeds – 1 tbsp

Poppy Seeds – 1 tsp

Curd – 1/2 cup

Ghee/Oil – 4-5 tbsp

Coriander Leaves – 1 bunch finely chopped

Salt to taste


In a cooker, half cook the potatoes in steam, allow it to cool and keep it aside.

In a kadai, heat oil and once hot add the cumin seeds, fennel seeds, poppy seeds and green chillies and saute for a couple minutes.  Now add the onions and ginger and garlic paste and saute till the raw smell goes and the onions become translucent.  Now add the rougly chopped tomatoes and saute for a few more minutes till the tomatoes are cooked.  Allow it to cool and blend this together with the curd into a fine paste.

In the cooker, add ghee/oil and once hot add the finely chopped tomatoes and turmeric powder and saute till the tomatoes become mushy.  Now add the aubergine and mix well and cook for a few minutes till the aubergine is half cooked.  Now add the half cooked potatoes, red chilli powder, coriander powder, salt and the ground paste and mix well. Now close the lid and allow it to cook for 10 minutes.

Garnish with coriander leaves.
