Ingredients:

Bitter Gourd – 400 gms finely chopped

Mustard seeds – 1 tbsp

Urad dal – 1  tbsp

Turmeric powder – 1 tsp

Asafoetida – 1 tsp

Red chilli powder – 2 tbsp

Coriander powder – 1 tbsp

Oil – 4-5 tbsp

Salt to taste

Method:

In a kadai heat oil and once hot add Mustard seeds, Urad dal, Asafoetida and saute for a few minutes.

Now add the chopped bitter Gourd, Turmeric powder, red chilli powder and coriander powder and mix well.

Now add salt and reduce the heat to minimum and leave it for about 10 minutes stirring it every few minutes. Once the bitter Gourd is roasted well turn off the heat.
