Raw Banana – 1 cut into cubes
Chow Chow – 1 cut into cubes
Carrots – 3 medium finely chopped
Fresh grated Coconut – 1 cup
Curd – 2 cups
Mustard Seeds – 1 tbsp
Turmeric Powder – 1 tsp
Cumin Seeds – 1 tbsp
Green Chillies – 1
Curry Leaves – 1 sprig
Oil – 3-4 tbsp
Salt to taste
Grind the coconut, green chillies and cumin seeds into a paste and keep it aside.
In a cooker, heat oil and once hot add mustard seeds, curry leaves and saute for a couple of minutes. Now add all the vegetables, turmeric powder and mix well. Now add the ground paste and salt and mix well.
Now add three cups of water and close the lid and cook for two whistles. The Vegetables should be cooked but not become mushy.
Now remove from heat and add the curd and mix well.
Yummy Avial is now ready to taste !!
Note: This goes well with White rice, Adai as well as rotis.
One can add more vegetables such as pumpkin, drumstick, yam and beans.
