Carrots – 6-8 finely chopped

Fresh grated Coconut – 1 cup

Green Chillies – 3 finely chopped

Mustard Seeds – 1 tsp

Urad Dal – 1 tsp

Curry Leaves – 1 sprig

Oil – 3-4 tbsp

Salt to taste


In a kadai heat oil and once hot add mustard seeds, urad dal, green chillies and curry leaves and saute for a few minutes.

Now add the carrots and salt and 2 cups of water and mix well.  Close the lid and let it cook for 10 minutes and all the water evaporates.

Now add the grated coconut and mix well and saute for a few minutes.

Yummy Carrot Kari is ready to taste !!
