Aubergines – 2 medium cut into cubes
Turmeric Powder – 1 tsp
Mustard Seeds – 1 tsp
Cumin Seeds – 1 tbsp
Green Chillies – 4-5
Coriander Seeds – 1 tbsp
Ghee/Oil – 4-5 tbsp
Salt to taste
In a mixie, grind green chillies, coriander seeds and cumin seeds into a coarse powder.
In a kadai, heat ghee/oil and once hot add mustard seeds, cumin seeds and sauté for a couple of minutes.
Now add chopped baingan, turmeric powder and salt and mix well.
Cover and cook for 2-3 min. Now add the dry powder and mix well. Saute for a few more minutes till the baingan is roasted well.
