Ingredients:

Baby Potatoes – 500 gms (boiled and peeled)

Dry red chillies – 5

Coriander seeds – 2 tbsp

Fennel Seeds – 2 tbsp

Cumin Seeds – 1 tbsp

Curry Leaves – 1 sprig

Cinnamon Stick – 2

Cloves – 2

Black Pepper – 1 tsp

Fresh coconut – 1/2 cup

Mustard Seeds – 1 tbsp

Urad Dal – 1 tbsp

Onions – 3 finely chopped

Tomatoes – 3 finely chopped

Green chillies – 2 slit into halves

Ginger Garlic paste – 1 tbsp

Turmeric Powder – 1 tsp

Red Chilli powder – 1 tsp

Coriander powder – 1 tsp

Coriander Leaves – 1 bunch finely chopped

Ghee/Oil – 4-5 tbsp

Salt to taste

Method:

In a kadai, once hot add red chillies, cinnamon sticks, cloves, coriander seeds, fennel seeds, cumin seeds, black pepper and fresh coconut and sauté for a few minutes.  Once cool grind them into a fine powder and keep it aside.

In the same kadai, heat oil and once hot add  the mustard seeds, urad dal and the curry leaves and sauté for a couple of minutes.

Now add the onions, green chillies and ginger and garlic paste and fry till golden brown.  Now add the tomatoes and sauté for a few more minutes.  Now add the turmeric powder, chilli powder, coriander powder and mix well.  Add half a cup water and let it simmer.

Now add the baby potatoes, ground masala powder and salt and mix well.

Saute till all the water dries up.

Garnish with coriander leaves.

Baby potatoes chettinad style is now ready !!
